This week’s Vegetarian Meal Plan: I’ve thoughtfully curated this special meal plan to be filled with a wide variety of nourishing vegetables, healthy grains, rich feta cheese and classic Mediterranean herbs. This combination of week night dinners achieves the perfect balance of hearty and refreshing, savory and tangy!
The menu:
- Monday: Zucchini & Feta Omelette From Crete
- My family is from Crete, and this zucchini and feta omelet is very popular there. It’s made with simple ingredients and comes together in about 15 minutes.
- Tuesday: Spanakopita Salad
- Sometimes salad can get a little boring, so ramp it up with this delicious and fun spanakopita salad. It has all the flavors of spanakopita with fun oversized crispy phyllo croutons.
- Wednesday: Hearty Vegetables Soup
- This hearty vegetable soup is easy to make, super delicious, and a great way to incorporate more veggies into your diet. The best thing is that you can make it your own each time.
- Thursday: Greek Leeks & Rice Pilaf: Prasorizo
- Prasorizo is a delicious, classic Greek dish made with a handful of simple ingredients and comes together in no time. It’s an oil-based vegetarian pilaf usually made with lots of rich olive oil, leeks, and rice.
- Friday: Gigantes Plaki: Greek Giant Bean Casserole
- This gigantes (giant bean) casserole is too delicious to pass up. All of the Greek flavors are in this dish.
