A weekly meal plan is the simplest way to keep yourself and your family on a balanced diet. Mediterranean diets are known for being filled with healthy herbs, protein, vegetables, and healthy fats like Omega-3s.
This week’s meal plan: Have a little trip around the world with this week’s dinner menu. From Peru, Italy to Morocco, the whole family is going to love these culinary adventures! Plus, these flavorful dishes can be ready in under 1 hour. Perfect for busy weeknight!
The menu:
- Monday: Peruvian Chicken Fried Rice
- Experience the deliciousness of Peruvian chicken fried rice with a unique twist – no soy! Because this stir-fry has protein, veggies, and rice, it’s a complete meal in one pot. However, you could serve this with roasted green beans or easy briam roasted veggies.
- Tuesday: Greek-style Fattoush Salad
- Fattoush salad is a popular Lebanese salad. This is my take of this delicious and flavorful dish. Make it healthier with baked pita chips.
- Wednesday: Asian Shrimp and Broccoli Stir-fry
- This Asian Shrimp stir-fry has no soy and is ready in 20 minutes. The whole family will love it, and it beats take-out any day of the week.
- Thursday: Creamy Tuscan Chicken
- This is my version of a creamy Tuscan Chicken. Juicy chicken cooked in a sumptuous creamy sauce with sundried tomatoes, parmesan cheese, and spinach.
- Friday: Moroccan Harira Soup
- This hearty Moroccan Harira soup has a zesty tomato sauce base and is full of lamb, lentils, and chickpeas. It’s chunky, and all comes together in one pot. Make it in Instant Pot for easy dinner on busy weeknights.
