You’ll find creamy skillet dinners, cozy Greek stews, chicken and rice, colorful sheet-pan meals and a few fun recipes that are even better than takeout. Choose one for tonight or save the whole collection for those busy evenings when you have chicken in the refrigerator but absolutely no idea what to make with it.

Quick Mediterranean Chicken Recipes

These are the recipes I turn to when everyone is hungry and dinner needs to happen fast. They’re simple enough for a weeknight but still packed with bright Mediterranean flavor.

1. Greek-Style Yogurt Marinated Chicken

This Greek-style yogurt marinated chicken is one of the most useful chicken recipes to keep in your rotation.

The yogurt, lemon, garlic and herbs make the chicken incredibly flavorful and help keep it tender and juicy. Grill it, bake it or cook it in the air fryer depending on what works best that evening.

Tender chicken simmers with sweet peas, potatoes, carrots, tomatoes and herbs to create a complete one-pot meal. It’s nourishing, comforting and even more flavorful the next day.

What to Serve with Mediterranean Chicken

Many of these recipes are complete meals, but a simple side can make dinner feel extra special.

Serve Mediterranean chicken with:

  • Greek salad
  • Tzatziki
  • Warm pita or crusty bread
  • Lemony roasted potatoes
  • Rice or orzo
  • Roasted vegetables
  • Feta and olives
  • Hummus
  • Steamed greens finished with lemon and olive oil

When the chicken already includes rice, pasta or potatoes, I usually keep the side simple with a fresh salad, cucumbers, tomatoes or steamed greens.

How to Keep Chicken Tender and Juicy

Chicken thighs are my favorite choice for many Mediterranean chicken recipes because they remain juicy and flavorful even when they cook a little longer.

Chicken breast can also be used in many of these dishes, but it usually needs less cooking time. Use an instant-read thermometer and remove the chicken once it reaches a safe internal temperature of 165°F.

Marinades made with yogurt, lemon, olive oil and herbs add plenty of flavor. Allowing cooked chicken to rest for a few minutes before slicing also helps keep the juices inside.

Can I Prepare These Chicken Recipes Ahead?

Many of them are perfect for meal prep.

Chicken stifado and Greek chicken stew taste even better the following day. Yogurt-marinated chicken can be seasoned in advance, while chicken and rice bowls can be divided into containers for easy lunches.

Store sauces and fresh salads separately so they remain fresh. Reheat the chicken, rice, pasta or stew, then add the cold toppings just before serving.

Which Mediterranean Chicken Recipe Should I Make First?

For the fastest dinner, start with the creamy spinach and feta chicken or the chicken orzo.

If you want something cozy and mostly hands-off, make the chicken stifado. For meal prep, try the chicken shawarma bowls. And when you want a beautiful dinner that feels extra special, make the chicken maqluba and flip it onto a large platter at the table.
