This Crispy Chicken Souvlaki Wrap is a Greek-inspired twist on the viral crispy wrap trend. Juicy, marinated chicken thighs are paired with creamy tzatziki, melty cheese, and fresh toppings, then pan-seared until golden and crisp. The seasoned crust adds incredible flavor and texture, creating a wrap that is crunchy on the outside, tender on the inside, and completely irresistible.
Ingredients
For the Chicken Souvlaki
- 1½ pounds (680g) boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 garlic cloves, grated
- 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
For the Wrap Filling
- 4 large flour tortillas
- 1–1½ cups (113–170g) shredded mozzarella or gouda
- ½ cup tzatziki sauce
- 1 small tomato, thinly sliced
- Thinly sliced red onion, to taste
- Optional fries for filling
For the Crispy Seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- Pinch cumin, optional
- 2–3 tablespoons olive oil or melted butter for cooking
Instructions
Preheat the oven to 425°F (220°C). Place a metal baking pan in the oven while it heats so the pan becomes very hot.
In a bowl, combine the olive oil, lemon juice, grated garlic, oregano, salt, and black pepper. Add the chicken thighs whole and mix well to coat. Allow the chicken to marinate for at least 20 minutes or longer if time allows.
Carefully remove the hot pan from the oven. Arrange the marinated chicken thighs in the pan in a single layer. The hot surface will immediately begin searing the chicken.
Return the pan to the oven and cook until the chicken begins to develop color and is partially cooked through. Switch the oven to broil and cook for a few additional minutes until the chicken is beautifully golden with lightly charred edges.
Remove the pan from the oven and allow the chicken to rest briefly. Slice into strips or bite-sized pieces.
Prepare the crispy seasoning by combining the paprika, garlic powder, oregano, salt, black pepper, and optional cumin.
To assemble the wraps, place a tortilla on your work surface. Sprinkle a layer of shredded cheese over the center. Add the sliced chicken, a spoonful of tzatziki, tomato slices, red onion, and optional fries. Fold the tortilla tightly to form a sealed wrap.
Lightly brush the outside of each wrap with olive oil or melted butter. Sprinkle the seasoning evenly over the surface.
Heat a skillet over medium heat. Place the wraps seam-side down and cook until deeply golden and crisp, pressing gently while cooking. Flip and cook the remaining side until evenly browned.
Allow the wraps to rest briefly before slicing and serving.
