Spinach and feta are a classic Greek flavor combination. I add some creamy ricotta cheese and herbs to create the most perfect appetizer. The phyllo bakes to a crisp perfection and the fact that these can be made weeks ahead and stored in the freezer makes them the perfect party food. You cannot go wrong with comforting classics like this one. Follow the step by step recipe then bake some and freeze the rest.

A simple appetizer piled high on a serving dish that your guests will absolutely love. The filling is creamy and flavorful. I love adding ricotta cheese to mellow out the feta cheese and add more creaminess. The spinach is never pre-cooked so, it tastes very fresh and moist and never soggy. Use butter in the phyllo instead of olive oil if you can. I love salted butter. Here, in the States it’s not too salty, but, you can always go for unsalted butter and salt yourself to have more control of the final product.

Trust me when I tell you that you will be very happy if you make an extra batch and freeze it.

        I love these rolls, made them twice already, but every time there is too much liquid coming out while they are baked. Yours seem perfect in the video. Could it be because of fresh spinach?

    Hi Dimitra, I can’t seem to find only the Spinach & Feta Phyllo Spanakopita Rolls recipe. Is it possible to send it to me by email? Also, I noticed that in your Spinach & Feta pie recipe you used olive oil rather than butter. Will either butter or oil be preferable or will one or the other work?
