This quick and easy lemony salmon and potato sheet pan meal is ready has less than ten ingredients and is ready in less than an hour. I use my delicious lemon ladolemono dressing to roast juicy, tender salmon and pillowy soft potatoes with crispy edges. Prepping the potatoes and salmon takes just a few minutes, and there will only be one pan to clean later. The whole family will love it!
I make plenty of dressing because I love ladolemono… and a perfectly cooked potato easily mashed in ladolemono. I always use wild salmon because if you do a little research, you’ll find that farm-raised salmon is not something you want to put in your body. Costco sells it for a really good price, and they have giant bags of potatoes. Ha!

What do I need for this sheet pan meal?
Salmon fillet -choose one that will feed the family, or you can use individual portioned salmon fillets. If you aren’t a fan, try cod or another white fish. Just watch the cooking time because some fish cook quicker than others.
Golden potatoes -or russet potatoes… peel and cut into wedges about the same size to help them all cook in the same amount of time.
Fresh dill -finely chopped to sprinkle over the top of the cooked salmon and potatoes for garnish and fresh herb flavor.
What do I need for ladolemono dressing?
Extra virgin olive oil -use a good quality oil like the one in our shop because there are just a few ingredients flavoring your dressing.
Fresh lemon juice -use fresh for the best citrusy lemon flavor.
Garlic cloves -grated or minced to melt right into the dressing.
Spicy mustard -adds a little kick and helps emulsify the dressing.
Dried oregano -the perfect herb for this dressing, but you could use dill, basil, or your favorite herb.

How do I make the dressing?
Combine all the dressing ingredients in a bowl and whisk together. So simple!
How do I cook the potatoes without overcooking the salmon?
Preheat the oven to 425 °F, 220 °C. Place the potato wedges in a sheet pan. Pour half of the dressing over them and season with salt and black pepper. Then, roast the potatoes on the center rack for 25 minutes or until fork tender.
When do I cook the salmon?
Pull the tray of potatoes out of the oven and make room for the salmon. Add the salmon to the pan and pour the remaining dressing over it. Season with salt and pepper and roast for 12-15 minutes until cooked through.

How do I serve this Lemony Salmon & Potato Sheet Pan Meal?
Garnish the salmon and potatoes with fresh chopped dill, and just like that, dinner is ready. A lovely Greek salad—or even a Greek cabbage salad known as lahanosalata—would add a ton of fresh veggies to your meal. You could make some roasted garlic bread alongside the salmon, or if you have a baguette on hand, you can soak up all the delicious juices of the dressing. Kali Orexi!

Ingredients
- 2 pounds salmon fillet
- 2 pounds golden or russet potatoes, in wedges
- finely chopped fresh dill
The Ladolemono Dressing:
- 1/2 cup olive oil, or less
- 1/2 cup fresh lemon juice
- 6 garlic cloves, grated
- 2 teaspoons spicy mustard
- 2 teaspoons dried oregano
Instructions
- Preheat the oven to 425 °F, 220 °C.
