The menu:
- Monday: Lentil Salad with Roasted Vegetables
- This French lentil salad with roasted vegetables and creamy feta is so satisfying. The veggies are roasted until tender, giving them a nice, caramelized flavor, and the lentils are peppery and nutty
- Tuesday: Vegetarian Stuffed Eggplant (Melitzanes Papoutsakia)

- Wednesday: Creamy Vegan White Bean and Kale Soup
- This soup is loaded with flavor and veggies. It’s a great way to get some nutritious veggies and fiber into your family’s diet without sacrificing flavor.
- Thursday: Vegetarian Bolognese Sauce
- This is my take on the vegetarian version of classic Bolognese sauce. Still hearty. Still rich and delicious. The two types of mushrooms give this sauce so much depth of flavor. It tastes better the next day when the flavors marry. Serve over your favorite pasta.
- Friday: Easy Spanakopita Pie in Skillet
- My easy spinach and feta pie is full of mixed greens, topped with flaky puff pastry and cooked in a cast iron skillet.
