A quick and easy, healthy, low-carb meal full of flavor!
This low-carb, high-protein stir fry is so delicious, nutritious, and full of veggies. It comes together in under thirty minutes with simple and inexpensive ingredients, making it a win all the way around.
The meaty ground beef combined with the soft cabbage is so tasty together, and you can make it your own by swapping out the meat or adding more vegetables. It’s the perfect quick and easy meal for any day of the week.
Why will I make this often?
Juicy beef,
Tender cabbage,
Sweet onions,
Sharp garlic,
Spicy pepper,
Salty umami soy sauce,
Fresh scallions!
What ingredients do I need?
Olive oil -I like to always use good quality oils. Try the one in our shop!
Onion -a finely chopped yellow or white onion would be best, but use what you like.
Garlic cloves -grated or minced to melt into the dish.
Ground beef -I like to use beef that’s a little fatty. Beef that you would use to make hamburgers. However, you can use lean ground beef if you prefer.
Salt and freshly cracked black pepper -add a little at a time to avoid over-salting while using soy sauce, and taste each time.
Crushed red pepper flakes -you can add as much or as little as your family enjoys.
Soy sauce -I use coco aminos but use what you have on hand.
Shredded cabbage Cole slaw -I love using this mix because the cabbage is already shredded with a few shredded carrots, and it saves some time. It’s a hack I take often, but you can shred your cabbage if you like.
Scallions thinly sliced -adds the most delicate freshness and pairs so well with the soy sauce.
Are there easy optional ingredients?
Scrambled eggs keep it low carb and add even more protein. However, if you aren’t watching your carbs, try it with buttery skillet potatoes. Watch my video to see how I make them!
Can I substitute the ground beef?
Any ground or shredded meat would work in this dish. Try shredded beef, shredded roasted or rotisserie chicken, ground turkey or chicken. Just remember to add any pre-cooked ground or shredded meat to the skillet after you wilt the cabbage.
How do I make high-protein ground beef stir fry?
Put the onion, a pinch of salt, and olive oil in a large skillet or pot and cook over medium heat until soft and golden -about 10 minutes. Add the garlic and warm through until fragrant -about 30 seconds. Then, add the ground beef to the skillet and cook for a few minutes until most of the pinkness is gone.
Season with salt, red pepper flakes, and black pepper, and cook for about 10 minutes. Add the shredded cabbage mix and soy sauce to the pot and cook over medium-high heat until the cabbage wilts. Taste and add more seasoning if needed.
Top with the sliced scallions and cover the pot. The scallions will soften and will also release their flavor.
How do I add even more protein?
Scramble 5-8 eggs in a pan along with melted butter. Serve them over the cabbage and beef for extra protein and flavor.
How can I serve this high-protein stir-fry?
I serve the stir-fry with the bowl of eggs on the side. Everyone can choose whether they’d like eggs, and just so you know, I always do. It’s extra delicious! If you have time, you could even make individual fried eggs, and the creamy yolk will add a velvety sauce as it runs through the dish.
What if I’m not eating low-carb?
I don’t do well on low-carb, so I get it. You can serve it over rice, noodles, or potatoes. I prefer my buttery skillet potatoes because it goes so well together. I boil potatoes until tender, then cut them into large bite-size pieces. Melt several tablespoons of butter in a skillet and add the potatoes. Brown and flip with a spatula to help the potatoes stay together. Once the potatoes are browned, season with salt and pepper to taste and serve with the stir-fry.
Are there creative ways to serve this?
Yes! One of my favorite ways to serve this is as a breakfast wrap. I use a tortilla or pita and add scrambled eggs, cheese, and different sauces. The kids love it and eat it for breakfast, lunch, or dinner. The whole family will love it this way! Kali Orexi!
