Flaky, golden puff pastry filled with savory beef, tangy feta, and melted cheese—these Greek beef and feta hot pockets are finished with garlic herb butter while they’re still warm. Serve them with a bowl of tzatziki and a crisp salad, and dinner is ready.
The filling has onion, red bell pepper, garlic, and tomato paste, with oregano, paprika, cumin, and a little cinnamon for warmth. Feta gives it that delicious salty bite, while kasseri or mozzarella melts around the beef. Then comes the finishing touch: a light brush of butter with fresh garlic, parsley, and oregano. So much flavor in one crispy pocket!
This recipe makes six large hot pockets from one package containing two puff pastry sheets. Assemble them ahead and chill before baking, or freeze them unbaked for later.

Why you’ll love these beef and feta hot pockets
- Flaky pastry without homemade dough: Two sheets of store-bought puff pastry make the crisp, golden shell.
- A flavorful filling: The beef is seasoned with garlic, herbs, and warm spices, with peppers and tomato paste adding sweetness and depth.
- Two kinds of cheese: Feta brings tanginess, and kasseri or mozzarella gives you that melty cheese pull.
- Easy to serve: Make large pockets for dinner or smaller ones for a party.
- A freezer option: Assemble the pockets without egg wash and bake them directly from frozen when needed.

What ingredients do I need?
For the beef filling
Lean ground beef: One pound makes the filling for all four large pockets. Break it into small pieces as it browns so the filling is easy to divide and spread.
Olive oil, onion, and red bell pepper: The onion and pepper soften in the skillet after the beef is browned. Keep them finely chopped so you get a little of everything in each bite.
Garlic and tomato paste: Cook these with the seasonings until the tomato paste darkens slightly. The filling should be thick and savory, with very little moisture left in the pan.
Oregano, sweet paprika, cumin, and cinnamon: Oregano gives the filling an herby flavor, paprika adds gentle sweetness, and the cumin and small amount of cinnamon bring warmth. Add crushed red pepper flakes to taste.
Salt, black pepper, and fresh parsley: Stir in the parsley after taking the skillet off the heat, then taste and adjust the seasoning before cooling the filling.
For the pastry and cheese
Puff pastry: Use two puff pastry sheets, thawed but still cold. Cut each sheet along its fold lines into three strips. Each strip folds over its filling to make one pocket, giving you six large hot pockets altogether.
Feta: Crumbled feta adds tangy, salty pieces throughout the filling.
Kasseri or mozzarella: Kasseri gives the pockets a delicious Greek flavor. Mozzarella is an affordable alternative with an excellent cheese pull.
Egg, water, and sesame seeds: The egg wash goes around the borders before sealing and over the tops before baking. Finish with a generous sprinkle of sesame seeds.
For the garlic herb butter
Melted salted butter, grated garlic, fresh parsley, and dried oregano make the finishing butter. Brush it lightly over the hot pockets as soon as they come out of the oven.

How to make Greek beef and feta hot pockets
Brown the beef and cook the filling
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and brown it, breaking it into small pieces. Add the finely chopped onion and diced bell pepper, then cook for 5–6 minutes, until softened and most of the released moisture has evaporated.
Stir in the garlic, tomato paste, oregano, paprika, cumin, cinnamon, crushed red pepper flakes, salt, and pepper. Cook for another 2–3 minutes, stirring frequently, until the tomato paste darkens slightly.
Take the skillet off the heat and stir in the parsley. Taste the filling and adjust the seasoning, then transfer it to a shallow dish to cool completely.
Prepare the puff pastry
Preheat the oven to 400°F.
Line a large baking sheet with parchment paper. Gently unfold the two puff pastry sheets, keeping them cold. Cut each sheet along its fold lines into three long strips. You’ll have six strips altogether, with each strip making one large hot pocket.
Fill and seal the pockets
Divide the cooled beef filling among the six pastry strips, placing it on one half of each strip and leaving a 1/2-inch border around the edges. Divide the crumbled feta and shredded kasseri or mozzarella among the pockets. Keep the borders clear and avoid overfilling.
Whisk the egg with the water and lightly brush the exposed pastry borders. Fold the empty half of each strip over the filling, gently press out any trapped air, and seal the edges firmly with a fork.
Arrange the pockets on the prepared baking sheet, leaving space between them. Cut three small slits into the top of each pocket.
Chill before baking
Place the assembled hot pockets in the refrigerator or freezer for 20–30 minutes, until the pastry is cold and firm. This chilling step helps the pastry puff beautifully when baked.
Bake and finish with garlic herb butter
Bake for 22–27 minutes, until the pastry is deeply golden, crisp, and puffed.
Combine the melted butter, grated garlic, parsley, and oregano. Brush the tops lightly as soon as the pockets come out of the oven, then let them cool for 5–10 minutes before serving. The filling will be very hot!

How do I keep the bottoms crisp?
The filling needs to be cool and fairly dry before it touches the pastry. Cook off the moisture released by the onion and pepper; excess liquid can make the bottoms soggy.
Keep the puff pastry cold, too. Warm filling softens the butter in the pastry and prevents it from puffing properly. If the pastry becomes soft or sticky while you’re assembling, refrigerate the assembled pockets for 15 minutes before baking.
Finally, leave enough room around the filling to seal the edges firmly. An overfilled pocket is difficult to close and more likely to open during baking.
What should I serve with beef and feta hot pockets?
For a simple Greek dinner, serve the pockets with my Maroulosalata: Greek Lettuce Salad and Tzatziki Sauce. The crisp lettuce salad is a lovely contrast to the rich pastry, and the cool, creamy dip goes beautifully with the seasoned beef.
For a cozy lunch or dinner, pair them with my Creamy Roasted Tomato Soup. The roasted tomato flavor is delicious alongside the buttery pastry and cheesy filling.
For a party, make the smaller pockets and arrange them on a platter with bowls of tzatziki and warm marinara or tomato sauce for dipping. You can assemble them earlier in the day, refrigerate, and add the egg wash just before baking.
Can I make smaller appetizer pockets?
Yes! Cut each pastry sheet into six rectangles instead of four. You’ll have twelve rectangles altogether: six bottoms and six tops, making six smaller hot pockets.
Divide the filling and cheese among the six bottoms, leaving room to seal each pocket. Reduce the baking time slightly and look for the same deeply golden, crisp finish.
Can I freeze the hot pockets before baking?
Yes. Assemble the pockets, including sealing the edges and cutting the vents, but do not add the egg wash. Freeze in a single layer until firm, then transfer to a freezer-safe container.
When ready to bake, place the frozen pockets on a parchment-lined baking sheet. Brush with egg wash, add the sesame seeds, and bake directly from frozen at 400°F, allowing approximately 5–10 additional minutes. Finish with the garlic herb butter after baking.

Frequently asked questions
Can I use mozzarella instead of kasseri?
Absolutely. Either works in this recipe. Kasseri gives the filling a Greek cheese flavor, while mozzarella melts beautifully and gives you a lovely cheese pull. Keep the feta in the filling for its tangy flavor.
Are these made with phyllo or puff pastry?
These hot pockets use puff pastry. It makes a layered, puffy shell from two pastry sheets. If you’re looking for a beef pie made with phyllo, try my Kreatopita: Greek Minced Meat & Phyllo Pie.
Why didn’t my pastry puff properly?
Check that the filling was completely cool and the pastry was still cold before baking. If the dough becomes soft or sticky while you work, give the assembled pockets 20-30 minutes in the refrigerator/freezer before putting them into the oven.
How do I know when they’re done?
The pastry should be deeply golden, crisp, and puffed. Use the 22–27-minute baking time as your guide and check the finish before taking the tray out of the oven.
