If there’s one ingredient I always love having in my freezer, it’s puff pastry. With very little effort, one sheet of buttery, flaky pastry can turn seasonal vegetables, creamy cheeses, fresh fruit, or even leftover chicken into something that looks absolutely beautiful on the table.

These easy puff pastry tart and galette recipes are some of my favorites because they look impressive without requiring you to make pastry dough from scratch. Simply unfold the puff pastry, add your filling, fold or shape the edges, and bake until beautifully puffed and golden.

And while we often call these rustic free-form tarts galettes, you can think of them as easy puff pastry tarts—perfect for everything from brunch and lunch to appetizers, dinner, holidays, and dessert.

I’ve gathered my favorite sweet and savory puff pastry recipes in one place. There are plenty of Greek and Mediterranean flavors, lots of feta (of course!), gorgeous vegetable tarts, and a few irresistible fruit-filled desserts.

Savory Puff Pastry Tarts & Galettes

Zucchini & Feta Galette

Tender zucchini, salty feta, and crisp, buttery puff pastry are such a delicious combination. This rustic tart is simple enough for an everyday lunch but pretty enough to serve for brunch or when entertaining.

It’s especially good when zucchini is abundant in the summer, and you can serve it warm or at room temperature.

Helpful Tip: Zucchini holds a lot of water, so don’t skip any steps in the recipe for removing excess moisture. Keeping the filling on the drier side is the secret to crisp, flaky puff pastry instead of a soggy bottom.

Mushroom & Cheese Galette

If you love mushrooms, this one is for you. Savory mushrooms and plenty of cheese sit on top of flaky puff pastry for a rich, comforting tart that’s incredibly easy to put together.

Serve it warm, and if you want to take it completely over the top, add a scoop of vanilla ice cream.

Helpful Tip: Slice the apples evenly so they soften at the same rate. For an extra-special dessert, serve the galette warm with vanilla ice cream and a little extra caramel drizzled over the top.

Tips for Making the Best Puff Pastry Tarts

Keep the puff pastry cold. Puff pastry gets its beautiful flaky layers from cold fat creating steam in the oven. If the pastry becomes very soft while you’re assembling your tart, pop it back into the refrigerator before baking.

Don’t overload the filling. More isn’t always better. Too much filling—especially watery vegetables or juicy fruit—can prevent the center of your puff pastry from becoming crisp.

Watch the moisture. Ingredients like zucchini, tomatoes, spinach, and mushrooms contain plenty of water. Follow the individual recipe instructions for preparing them so you don’t end up with soggy pastry.

Bake until deeply golden. Pale puff pastry usually means underbaked puff pastry. You want those layers beautifully puffed, crisp, and golden brown.

Use parchment paper. It makes transferring and cleaning up these rustic tarts so much easier.

Sweet or Savory—Which Puff Pastry Tart Will You Make First?

That’s the beauty of keeping puff pastry in the freezer: you can turn it into almost anything.

For something savory, I’m always drawn to the spinach and feta, zucchini and feta, or halloumi and tomato galettes. For dessert, the caramel apple and pear frangipane tarts are hard to beat.
