The perfect summer side dish that’s sweet, salty, and so refreshing!

My watermelon and feta salad is the perfect bright summer salad. It’s sweet, salty, fresh, and tangy and goes with everything. It may be one of the simplest recipes on my channel because it has just seven ingredients, and there’s no cooking. All you do is whisk the dressing, pour it over the watermelon and feta, and it’s ready to serve.
I love watermelon, and we eat it almost every day while it’s in season. Check out the “How to Pick a Perfect Watermelon” post to get the best one every time. I cut the watermelon into cubes to avoid waste, but you can use a melon baller for perfectly round bites. I could eat a whole platter of this by lunch because it’s so delicious and refreshing. It’s hot in Texas, and this is a delightful way to help keep us cool. I can’t wait for you to try it!

What do I need for this salad?
Half of a watermelon -cubed or scoped out with a melon baller. You could even use small cookie cutters to shape each piece in a fun way. Let the kids help!
Feta cheese -measure this with your heart because I may like more than you. Ha! It adds so much salty creaminess and is the perfect pairing for sweet, juicy watermelon.
Fresh mint leaves -or basil, finely chopped to mix evenly into the salad. It kicks the freshness of this salad even more.
Can you add anything else to this salad?
Crushed red pepper flakes -I like to add this for a hint of spice. It compliments the sweetness of the salad.
Pickled red onions -would add more tang, sweetness, and a soft crunch.
Avocado -the smooth, velvety texture would add even more creaminess to the salad.
Walnuts -or crushed pistachios would add a wonderful crunch.

What do I need for the dressing?
Extra virgin olive oil -use the best quality you have because you’ll taste every ingredient of this simple salad.
Balsamic vinegar -it makes the dressing a little dark but has the perfect tangy flavor. If you don’t have that, you could use white vinegar, lemon juice, or lime juice.
Honey -to balance out the tanginess of the vinegar.
Salt & freshly cracked black pepper –enhances the flavor of the whole dish.

How do I make the dressing?
Whisk the dressing ingredients together and set aside.
How do I make watermelon and feta salad?
Add the watermelon cubes into a large bowl. Add the dressing and toss together to coat. Crumble the feta cheese on top and toss.
How do I serve this salad?
Transfer to a serving platter and top with crushed red pepper flakes and the finely chopped fresh mint. Kali Orexi!

Watermelon & Feta Salad

Ingredients
- Half of a watermelon, cubed
- 6 oz feta cheese
- fresh mint leaves, finely chopped
Optional:
- crushed red pepper flakes
- pickled red onions
- avocado
The Dressing:
- 4 tablespoons extra virgin olive oil
- 2 tablespoons Balsamic or white vinegar
- 1 tablespoon honey
- salt, to taste
- freshly cracked black pepper, to taste
Instructions
- Whisk the dressing ingredients together and set aside.
- Add the watermelon cubes into a large bowl. Add the dressing and toss together to coat.
- Crumble the feta cheese on top and toss. Transfer to a serving platter and top with crushed red pepper flakes and thr finely chopped fresh mint.
