A weekly meal plan is the simplest way to keep yourself and your family on a balanced diet. Mediterranean diets are known for being filled with healthy herbs, protein, vegetables, and healthy fats like Omega-3s. 

This week’s Vegetarian Meal Plan: I’ve thoughtfully curated this special meal plan to be filled with a wide variety of nourishing vegetables, healthy grains, rich feta cheese and classic Mediterranean herbs. This combination of week night dinners achieves the perfect balance of hearty and refreshing, savory and tangy!

The menu:

  • Monday: Stovetop Briam with Eggs: Ratatouille Shakshuka
    • This recipe is perfect for a busy weeknight when all you have is 30 minutes and have to use up whatever in the fridge and pantry. Feel free to substitute any of these vegetables with your favorites. Keep it low-carb by leaving out the beans and adding some spinach to the dish
  • Tuesday: Artichoke and Pea Stew
    • You only need a few ingredients to make this flavorful stew, and it’s ready in less than 30 minutes. This recipe is my mom’s, and I love it just the way she makes it. However, you can change up the herbs, use frozen or canned peas, and even throw in some grated garlic to make it your own.
  • Wednesday: Mediterranean Black Lentil Salad
    • Urad dal is a particular type of lentil that’s very high in protein and super nutritious. You’ll find them in Middle Eastern, Pakistani, or Indian grocery stores since this type of lentil is not commonly used in European cooking. However, it’s completely worth finding them for this protein-packed, fresh salad with veggies.
  • Thursday: Boureki: Zucchini, Potato & Cheese Gratin From Chania
    • This cheesy gratin is delicious on its own and even better with a nice salad and some hearty bread.
  • Friday: Lahanopita: Greek Cabbage and Feta Pie
    • This Greek cabbage and feta pie is my version of Lahanopita. It’s popular in Northern Greece and on my island of Crete. I just love it, and of course, I add feta and shape it into a spiral to make it beautiful for serving, too.
