This easy and delicious roasted cod with pearl onions is a mashup of the two popular Greek dishes known as stifado and plaki. Stifados are traditionally made with beef and pearl onions, and plaki is really anything roasted in the oven with tomatoes, vegetables, and olive oil. So, I put them together to create this perfect quick, and easy weeknight stew that’s pretty enough for company. I keep the prep time to a mere 10 minutes by buying peeled or frozen pearl onions. Plus, the time and effort it takes to peel two pounds of these tiny onions is something I would pay extra for. Ha! The rest is cook time, and that’s a big plus when it comes to busy weeknights.

Simple ingredients
- Pearl onions -I highly recommend already peeled or frozen
- Cod fish fillets -washed, rinsed, and dried
- Olive oil -the one in our shop is straight from Crete
- Garlic cloves -grated or minced
- Balsamic dressing -or balsamic vinegar with a pinch of sugar or honey
- Bay leaves -adds so much flavor
- Pinch of crushed red pepper flakes -optional
- Crushed tomatoes -canned or freshly crushed
- Salt
- Freshly ground black pepper

How to make Roasted Cod with Pearl Onion Stifado
- Preheat the oven to 400 °F, 200 °C.
- Peel the onions and add them to a pan with olive oil and a pinch of salt.
- Cook over medium heat until softened and golden -about 8 minutes.
- Add the garlic and warm through until fragrant.
- Then, stir in the Balsamic dressing, tomatoes, salt, pepper, crushed red pepper flakes, and Bay leaves.
- Bring to a boil and remove from the heat.
- Taste and adjust the seasoning if desired.
- Place the cod fillets in a 9 x 13-inch baking pan.
- Season lightly with salt and pepper.
- Pour the sauce over the cod.
- Bake for 25-30 minutes.

Serving
Keep an eye on this while cooking because everyone’s oven cooks differently. Take the pan out when the cod is firm and flaky. Let it rest for about 10 minutes before serving so the sauce can settle. I like to garnish it with some chopped parsley for extra color and freshness. You can serve it with lemon wedges and toasted bread. Roasted Cod with Pearl Onions Stifado
Ingredients
- 2 pounds (900g) pearl onions
- 2 pounds (900g) cod fish fillets
- 1/4 cup olive oil
- 3-4 garlic cloves, grated
- 2 tablespoons Balsamic vinegar
- 2 bay leaves
- pinch of crushed red pepper flakes, optional
- 8 oz (230g) crushed tomatoes
- salt, to taste
- freshly ground black pepper to tasteSa

- Place the cod fillets in a 9 by 13-inch baking pan. Season lightly with salt and pepper. Pour the sauce over the cod.
- Bake for 25-30 minutes.
