Buttery Greek cookies with a golden finish and an easy roll-and-cut method—perfect for coffee, holiday cookie boxes, and sharing!

Love homemade koulourakia but don’t have time to shape every cookie individually? These koulourakia cookie sticks give you all that buttery vanilla flavor with much less shaping. Simply roll the dough between parchment, cut it into sticks, chill, brush with egg wash, and bake.
This version uses my vanilla and chocolate koulourakia dough with an easier way to get a big batch ready for the oven. Make them for a party, tuck them into holiday cookie boxes, or keep a few beside the coffee pot. A little melted chocolate makes them especially pretty for gifting!

What makes these cookie sticks so easy?
Instead of rolling and twisting each cookie, you cut rows of sticks from a rectangle of dough. The parchment keeps the dough manageable without covering your counter in flour.
The important step is chilling the shaped cookies. Give them 25 minutes in the freezer or 30–40 minutes in the refrigerator before brushing with egg wash and baking. Firm, cold dough helps the sticks hold their shape.
If you enjoy the traditional twists, you can find those in my classic koulourakia recipe.
Ingredients you’ll need
Butter and sugar: Use softened unsalted butter so it creams easily with the sugar. It should feel soft, without being melted or oily.
Eggs and egg yolks: These give the dough structure and richness. The additional yolks for the egg wash are separate from those in the dough.
Heavy cream: Adds richness to these Greek butter cookies.
Vanilla and optional citrus zest: Keep them vanilla or add lemon or orange zest. Zest brings citrus flavor without adding extra liquid.
Flour, baking powder, and salt: Add the flour gradually, and use the additional flour only if needed. The dough should be soft and manageable, rather than stiff and dry.
Optional chocolate ingredients: The recipe card includes everything needed to turn half the dough into chocolate dough. The melted chocolate for decorating is separate, so set aside enough if you’re doing both.

How to make koulourakia cookie sticks
Make the dough
Beat the butter and sugar until light and fluffy. Mix in the vanilla, eggs, and egg yolks, followed by the cream. Combine the dry ingredients separately, then gradually mix them into the butter mixture on low speed. Stop once the dough comes together.
For chocolate cookies, prepare the chocolate variation in the recipe notes before rolling. Let the chocolate mixture cool completely before adding it to the dough, then cover and rest the chocolate dough for 30 minutes.
Roll and cut
Divide the dough into manageable portions. Roll each portion between two sheets of parchment to an even ½-inch thickness.
Remove the top sheet and cut into sticks approximately 1 inch wide and 4 inches long using a pizza cutter, pastry wheel, or sharp knife. Transfer to parchment-lined trays, leaving about 2 inches between the cookies.
Chill, brush, and bake
Chill the shaped sticks in the freezer for 25 minutes or refrigerator for 30–40 minutes, until firm and cold.
Brush the tops lightly with the egg wash, add sugar or sesame seeds if you like, and bake at 350°F (180°C). Begin checking around 20 minutes; the estimated baking range is 20–28 minutes. Look for lightly golden edges and bottoms rather than relying only on the clock.
Keep the remaining trays chilled while the first batch bakes. Let the cookies firm up briefly on their trays before transferring them to a rack.

My tips for neat, tender cookie sticks
Don’t add flour just to make rolling easier. The parchment does that job. Extra flour can make the cookies dry.
Keep the thickness even. Thin ends brown faster than thick centers. Check the edges of the rectangle before cutting.
If the dough bends or sticks while transferring, chill it briefly. Slide the parchment and rolled dough onto a tray and refrigerate until easier to handle.
Use cool trays for each batch. Warm baking sheets soften the butter before the cookies reach the oven.
Brush lightly with egg wash. Coat the tops without letting egg wash collect around the bases.
Can I make different flavors from one batch?
Yes! Leave the entire batch vanilla, make half chocolate, or place pieces of both doughs beside each other before rolling for two-tone sticks. The chocolate directions are in the recipe notes.
Once the cookies have cooled completely, dip the ends in melted chocolate or drizzle it over the tops. Let the coating set before stacking or packing.
How do I store them or make them ahead?
Store completely cooled cookies in an airtight container at room temperature for up to 2 weeks. Separate chocolate-decorated layers with parchment.
You can also freeze the shaped, unbaked cookies until firm, then transfer them to a freezer-safe container for up to a month. Brush with egg wash before baking, and allow extra baking time if baking from frozen.

Vanilla & Chocolate Koulourakia Cookie Sticks
These are your koulourakia shaped into straight sticks for dunking in coffee. You can make vanilla sticks, chocolate sticks, or twist one rope of each together. A little melted chocolate on the ends makes them especially pretty for a cookie platter. I’ve kept your dough; the shorter shape needs a shorter bake than your original twists.
Ingredients
Vanilla dough
- 1 pound unsalted butter, at room temperature
- 1½ cups (350 g) granulated sugar
- 4 whole eggs
- 2 egg yolks
- ½ cup heavy whipping cream
- Zest of 2 large lemons or oranges, optional
- 2 teaspoons pure vanilla extract
- ½ teaspoon salt
- 1½ teaspoons baking powder
- 8 cups (1.16 kg) all-purpose flour
- Up to ½ cup additional all-purpose flour, only if needed
For chocolate dough, using half the vanilla dough
- ¼ cup (20 g) unsweetened cocoa powder
- ¼ cup hot water
- 1 teaspoon instant coffee
- 2 tablespoons granulated sugar
- 4 ounces (113 g) semisweet chocolate, melted
Optional egg wash and toppings
- 4 egg yolks, whisked with 4 tablespoons water
- Granulated sugar or sesame seeds
Optional chocolate decoration
- 4–8 ounces melted semisweet or dark chocolate, depending on how many sticks you want to decorate
Instructions
Make the Cookie Dough:
Beat the softened butter and sugar in a stand mixer fitted with the paddle attachment until light and fluffy. Scrape down the bowl as needed.
Add the vanilla, followed by the whole eggs and egg yolks, and beat until incorporated. Add the heavy cream and mix well.
In a separate bowl, whisk together the flour, salt, and baking powder. Stir in the citrus zest, if using.
With the mixer on low speed, gradually add the flour mixture. Mix just until a soft dough forms. Add the additional flour only if needed; the dough should be soft and manageable without sticking heavily to your hands. For the chocolate variation, follow the directions in the notes before shaping.
Roll and Cut the Sticks:
Line baking trays with parchment paper. Divide the dough into manageable portions, keeping the remaining dough covered while you work.
Place one portion between two sheets of parchment paper. Roll into a rectangle approximately ½ inch thick, keeping the thickness even.
Remove the top sheet of parchment. Using a pizza cutter, pastry wheel, or sharp knife, cut into sticks approximately 1 inch wide and 4 inches long.
Carefully transfer the sticks to the prepared trays, leaving about 2 inches between them. Gently gather and reroll the scraps, then repeat with the remaining dough.
Chill the Cookie Sticks:
Place the trays of shaped cookies in the freezer for 25 minutes or the refrigerator for 30–40 minutes. The dough should feel firm and cold before baking. This step helps the sticks hold their shape.
While the cookies chill, preheat the oven to 350°F (180°C).
Brush with Egg Wash and Bake:
Whisk the egg yolks and water together until smooth. Remove one tray of chilled cookies at a time and lightly brush the tops with egg wash. Avoid letting it puddle around the cookies. Sprinkle with sugar or sesame seeds, if desired.
Bake directly from chilled for approximately 20–28 minutes, until the edges and bottoms are lightly golden and the centers are baked through. Rotate the trays halfway through baking; if using two racks, switch the upper and lower trays as well. Keep the remaining cookies chilled until ready to bake.
Cool and Decorate:
Let the cookies rest on the baking trays until firm enough to move, then carefully transfer them to a cooling rack to cool completely.
If desired, dip one end of each cooled cookie into melted chocolate or drizzle chocolate over the tops. Place on parchment paper until the chocolate sets.
Notes
Flour: Add the extra ½ cup only if needed. Too much flour will make the cookies dry. Rolling between parchment makes soft dough easier to handle without adding flour to the work surface.
Chocolate Dough: To turn half the batch into chocolate dough, set aside half the vanilla dough. Combine the cocoa powder, hot water, instant coffee, 2 tablespoons sugar, and 4 ounces melted chocolate until smooth. Cool completely, then mix into the remaining half of the dough. Cover and rest for 30 minutes before rolling and cutting. Chill the shaped chocolate sticks as directed above.
Coffee Option: The instant coffee deepens the chocolate flavor and may be omitted. Alternatively, replace the hot water and instant coffee with ¼ cup prepared coffee.
Two-Tone Sticks: Arrange pieces of vanilla and chocolate dough next to each other between the parchment sheets. Gently roll them into one even rectangle, then cut into sticks.
Chilling: Chill the shaped cookies before adding the egg wash. If the dough becomes too soft to transfer while cutting, slide the parchment and rolled dough onto a tray and refrigerate briefly until manageable. Use cool baking trays for each batch.
Baking Time: The 20–28 minute range is an estimate for this adapted shape. Thickness, oven temperature, and how cold the dough is will affect the timing. Check the first tray early. Chocolate dough is harder to judge by color, so look for set tops and lightly browned bottoms.
Chocolate Decoration: Use a dry, microwave-safe bowl and melt the decorating chocolate in short bursts, stirring between each, until smooth. Let the cookies cool completely before dipping. The 4 ounces used in the chocolate dough are separate from the chocolate used for decoration.
Storage: Store completely cooled cookies in an airtight container at room temperature for up to 2 weeks. Allow chocolate decorations to set completely before packing, and separate decorated layers with parchment paper.
