These Feta Phyllo Parcels are crisp, golden pockets of flaky pastry filled with a creamy blend of feta, ricotta, lemon zest, and egg. Fresh from the oven, they’re drizzled with honey and sprinkled with sesame seeds for the perfect balance of savory and sweet. These feta phyllo parcels are a very popular snack in Greece, and I elevate them to the next level, making them even creamier than the traditional version. They’re always served with lots of Greek honey drizzled on top with a sprinkling of sesame seeds, but you can leave these savory without them. They’re so simple and easy to make that you may make them all the time!

What’s in the filling?
Feta cheese -for the best flavor, crumble from a block of high-quality feta, since there are so few ingredients. You know my favorite is sheep’s milk feta. Here’s the one I buy!
Ricotta cheese -this is so mild with a bit of texture. It blends in so well, balancing the creaminess of the filling and really allowing the feta to shine. Full fat is always the best to use.
Lemon zest – this isn’t a traditional ingredient, but it adds a hint of lemon flavor while brightening the filling with fresh citrus.
Egg -binds the filling together for perfect structure for a great, creamy, cheesy filling that’s almost close to custard.
What do I need for the phyllo?
#4 phyllo pastry -this one works best for light and crispy phyllo crunch. Move from the freezer the night before to thaw in the fridge and place on the counter to come to room temperature about an hour before assembling the parcels.
Unsalted butter -melt it so you can drizzle the butter over the phyllo to help it crisp up while baking.
What will I need for serving?
Honey –Greek honey is my favorite because it has floral notes, but a good local honey would be delicious too. Hot honey can also be used for a spicy kick.
Sesame seeds – you can lightly toast them to bring out their nutty flavor or use them raw.

How do I prepare the filling?
Preheat the oven to 350°F (180°C) and line a baking tray with parchment paper. In a mixing bowl, combine the feta, ricotta, lemon zest, and egg until creamy and well blended.
What’s the easiest way to assemble the parcels?
Place one sheet of phyllo on a clean surface and brush lightly with melted butter. Top with another sheet of phyllo and brush with more butter. Spoon 2 to 3 tablespoons of the filling near one end of the phyllo. Fold in the sides and roll up into a parcel. Place on the prepared tray seam-side down.
Can I assemble the parcels into a different shape?

How long do I bake them?
Brush the tops with melted butter and bake for 25-30 minutes, until golden brown and crisp.
