Get dinner on the table in 15 minutes with these quick and easy pita pizzas. These individual-sized pizzas are also a great way to use up those leftovers. Guaranteed to please everyone in the house. They're perfect for busy weeknights and great for a casual dinner party.
Ingredients
Breakfast Pizza:
- 1 pocketless-pita or naan bread
- A handful of fresh baby spinach leaves
- 3-4 tablespoons pizza sauce
- Shredded mozzarella cheese
- 1-2 tablespoons crumbled feta cheese
- 2 kalamata olives, pitted and sliced
- Sliced bell peppers
- 1 egg
- Dried oregano
- Preheat the oven to 525 °F, 275 °C.
- Place the pita bread on a baking tray lined with parchment paper.
- Spread the pizza sauce over the pita.
- Top with spinach, mozzarella, and feta cheese. Leave some room in the center for the egg.
- Sprinkle the kalamata olives and the bell peppers on top.
- Crack the egg into a bowl then transfer to the center of the pita.
- Sprinkle the egg with some salt and oregano.
- Pace the baking tray onto the center rack of the oven and bake for 5 minutes.
- Turn the broiler element on and broil for 2 minutes or until the egg white is set and the center is still runny.

The Classic Pizza:
- 1 pocketless-pita or naan bread
- 3-4 tablespoons pizza sauce
- Shredded mozzarella cheese
- Your favorite toppings: olives, peppers, onions, mushrooms, etc.)
- Preheat the oven to 525 °F, 275 °C.
- Place the pita bread on a baking tray lined with parchment paper and spread the pizza sauce on top.
- Cover the sauce with mozzarella cheese and your favorite toppings.
- Bake on the center rack of the oven for 5 minutes then Broil for 2 minutes or until the cheese is melted and bubbly. Enjoy!
Barbeque Chicken Pizza:
- 3-4 tablespoons barbeque sauce
- Leftover roasted chicken thinly sliced or chopped.
- Shredded mozzarella cheese
- Feta cheese or blue cheese, crumbled
- Your favorite toppings: olives, bell peppers, jalapeno slices, etc.
- Preheat the oven to 525 °F, 275 °C.
- Place the pita bread on a baking tray lined with parchment paper.
- Spread the barbeque sauce on top of the pita.
- Top with chicken, cheese, and the toppings.
- Bake on the center rack for 5 minutes then Broil for 2 minutes or until the cheese is melted and bubbly. Enjoy!
Instructions
- For the Pizza Sauce:
- 15 ounce can of crushed tomatoes
- 1.5 oz. tomato paste (put the rest in an airtight container and freeze for another recipe)
- ½ teaspoon dried oregano
- 1/8 teaspoon (or more) crushed red pepper flakes
- 1 and ½ teaspoons sugar
- 1 teaspoon dried basil
- Combine all of the ingredients in a blender and blend until smooth.
