  • 1 whole chicken with the skin on (about 5 pounds)
  • 1/2 cup olive oil
  • juice of one medium lemon
  • juice of one medium orange
  • Inside Chicken Cavity
  • 1/4 teaspoon turmeric powder
  • pinch of red pepper flakes
  • 1/2 teaspoon cumin powder
  • 1 teaspoon salt
  • black pepper, to taste
  • 1 teaspoon dried oregano
  • 12 whole garlic cloves
  • Exterior of Chicken
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin powder
  • 2-3 tablespoons dried oregano



Preheat Oven to 425 degrees.


Rinse and pat dry the chicken inside and out. Whisk the olive oil, lemon and orange juice together and pour over chicken, inside and out. Mix the seasoning for inside the chicken's cavity together and sprinkle it inside the chicken. Insert the garlic cloves.


Season the exterior of the chicken and rub so that it is covered in seasoning.


Place the chicken in a baking dish breast side down and cover with foil.


Roast in the oven for 1 hour and 35 minutes.


Remove the foil and roast for another 15 minutes until the skin gets golden and crispy.


Remove from the oven and allow to rest for 20 minutes
