This vibrant, flavorful meal is ready in under an hour and perfect for meal prep or a light, satisfying dinner.
You won’t believe the delicious array of Mediterranean spices and flavors in this meal. The chicken is bursting with so much flavor that I like to keep it on hand to top salads, rice bowls, or stuff in wraps or pitas. I’m cooking it and zucchini in a new, air-fryer convection oven that I absolutely love, because it cooks quickly, is healthy, and holds a half-sheet baking pan without overheating my kitchen. What should I gather for the chicken skewers?
Chicken breast – I usually use chicken thigh meat because it’s difficult to overcook and stays nice and juicy. You can still use thighs, but it’s easier to cut breast meat into cubes.
Olive oil – always use a good quality one to add as much flavor as possible.
Balsamic glaze – I love the thick, sweet, tangy flavor, but if you don’t have that, add a little honey to balsamic vinegar.
Salt & freshly ground black pepper -add as much as you like for your taste.
Dried oregano -pairs perfectly with tomatoes, adding earthy herbiness.
Ground coriander -adds a slightly citrus, warm nuttiness to the
Garlic cloves – grated or minced to infuse flavor into every drop of the marinade and chicken.
Tomato paste -there’s so much rich, concentrated tomato flavor in paste, and I use that to my advantage in this marinade.
Wooden or metal skewers – if using wooden skewers, soak them in water for 30 minutes before use to prevent burning.
What do I need for the tomato feta salad?
Ripe tomatoes -chopped or sliced grape, roma, or plum tomatoes. Use what you have or what you like best.
Extra virgin olive oil -it’s best to use this full-flavored oil for the best dressing.
Feta cheese -crumbled by hand from a block for best flavor. Here’s the link to my favorite sheep’s milk feta in the States.
Fresh mint -finely chopped, or you could use dill if that’s what you have on hand.
Fresh or dried oregano -or basil adds slightly sweet freshness to the salad. Honestly, use your favorite herbs or the ones you have on hand. This salad will be delicious either way!
What do I need to make air-fried zucchini?
Zucchini -sliced into half-moons or your favorite way to cook evenly.
Olive oil – you just need enough to drizzle over the zucchini and to coat.
Salt and pepper – I always say do this to taste, because everyone has their own preference.

In a large bowl, combine the olive oil, balsamic glaze, tomato paste, garlic, salt, oregano, coriander, and black pepper. Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
How do I make tomato feta salad?
The tomato feta salad is best made just before serving. In a bowl, combine chopped tomatoes with a drizzle of olive oil, crumbled feta, chopped mint, and a sprinkle of oregano. Toss gently and let sit while the chicken cooks.
