You won’t find a recipe here today because I’m going to teach you how to make your home smell like autumn with a simmering pot. It’s going to smell like you have an apple pie baking in the oven! I call these simmering pots, but they’re also called stovetop potpourri. Call it whatever you want because no matter what, your house will smell like fall.
Pots to simmer in
I usually use a saucepan to simmer over several days. However, you could use an instant pot on the slow-cooker setting, a crockpot, or a big soup pot. You can use any pot you’d like. However, the smaller the pot you use, the more often you’ll need to replenish the water. So, choose what’s best for you.
What to simmer
I don’t have exact ingredients or measurements because you can use what you have, what you like, and as much as you like. If you’re baking a lot this time of year, like I am, you have lots of peels and spices available. It’s also a great way to use citrus that’s getting old and drying out. You can cut it into slices and throw it in the pot. I love to use oranges because they’re more for the fall season, but lemons or limes would work too.
I save the apple peels after making apple pie to add, as well as a heaping teaspoon of whole cloves. Nothing says fall more than cinnamon, so I use 2-3 cinnamon sticks, plus a touch of vanilla extract. You aren’t eating it, so get the cheap imitation stuff to save money. This is my favorite combination for my simmering pots, but you could add more. Try star anise, allspice, nutmeg, or your favorite fall spices.
So easy to make
You basically throw my favorite combination, your favorite combination, or whatever you have on hand in a pot with water to simmer. Be sure the water covers everything in the pot by about an inch or more. Bring the water to a boil and reduce it to the lowest temperature. You want it to simmer low and slow.
How long will it last?
Your simmering pot should last 24 hours on the stovetop. If you only use peels and spices without fresh food, it can last up to four days! All you have to do is replenish the water about every 30-45 minutes. That way, you’ll constantly have the simmering aromatics filling your house with all the scents of fall.
