My eggs with spinach and feta sauce is a low-carb comforting skillet dish that brings together sautéed spinach, golden onions, a splash of cream, and tangy feta cheese. The eggs are gently nestled on top and cooked until just set for a rich, satisfying meal that’s low in carbs but big on flavor. This is one of my favorite go-to meal ideas for breakfast, lunch, or dinner. It’s ready in about 15 minutes, so you can’t beat it. I love serving it whenever I’m short on time and want to serve something delicious, or when I have friends over at the last minute for brunch. It’s so simple and delicious with basic ingredients in just a little bit of time. You’re going to love it as much as I do!

What do I need to make this dish?
Unsalted butter -this allows you to add a buttery flavor to the spinach and feta while controlling the amount of salt.
Olive oil -using a combination of butter and oil allows you to sauté the veggies without burning them while adding a creamy, buttery flavor.
Medium onion -I finely chop half an onion, but you can use more if you like.
Baby spinach leaves -you can leave them whole because of their size. If you use regular spinach leaves, be sure to give them a rough chop so you have smaller pieces. Consider mixing greens, such as baby kale, Swiss chard, and beet greens, for an extra flavor and nutritional boost.
Garlic cloves -grated or minced. I like to grind a bunch of cloves and store them in the freezer until they’re gone. Whenever I need garlic, I just break off a hunk.
Heavy whipping cream -keeps this dish creamy and low-carb. If you want the dish to be a little lighter, you can add a couple of tablespoons of flour and then use milk.
Feta cheese -my absolute favorite is Dodoni sheep’s milk feta, but you can use your favorite, too.
Grated nutmeg -adds a distinct warm spice traditional to cheese sauces.
Salt and black pepper -the duo that helps you flavor every dish to your liking.
Eggs -you’ll be able to cook these the way you like them. I like the whites to be set with the yolk still runny.
Crushed red pepper flakes -adds a little heat to take things to the next level. You can also garnish with chopped fresh dill or, instead of red pepper flakes, for a fresh, herbaceous finish.

How do I cook the spinach mixture?
In a skillet over medium heat, add butter and olive oil. Once melted, add chopped onion with a pinch of salt and sauté until soft and golden — about 8 minutes. Stir in the garlic and cook for 30 seconds. Add the spinach in batches, stirring until wilted. Season with black pepper.
When do I add creaminess?
Pour in the heavy cream, sprinkle in the nutmeg, and crumble the feta over the top. Bring to a gentle boil. Taste and adjust salt as needed.
How do I cook the eggs?
Create two wells in the spinach mixture and carefully crack the eggs into them. (Tip: Crack eggs into ramekins first for easier transfer.) Cover the skillet with a lid and cook over low heat for about 4 minutes, or until the egg whites are set and yolks are still runny. Remove from heat, and sprinkle with crushed red pepper flakes.
