How to Make Dutch Oven Greek Roast Chicken
Start with the potatoes

Add the juice of two lemons, a generous drizzle of olive oil, salt, pepper, crushed red pepper flakes, and oregano. Pour in ¾ cup chicken broth, toss everything together, and add the chicken neck if included.
Season the chicken
Remove everything from the chicken cavity and pat the chicken dry. Carefully loosen the skin over the breast without tearing it.
Season the back with salt, pepper, and oregano, then place the chicken breast-side up over the vegetables. Put the remaining garlic half inside the cavity with 1 teaspoon each of salt, coriander, cumin, and oregano, plus the rosemary and thyme.
Season the melted butter with black pepper and oregano. Pour some underneath the loosened breast skin and gently spread it over the meat. Pour the remaining butter over the chicken and legs.
Finish with the juice of 1–2 lemons, the remaining 1 teaspoon coriander, salt, pepper, oregano, and crushed red pepper flakes.
Roast covered, then uncover and brown
Cover and roast for 1 hour at 400°F.
Remove the lid carefully and increase the oven temperature to 425°F. Baste the chicken with the pan juices and gently turn the vegetables. Roast uncovered for another 35–45 minutes, basting several times.
Stop basting during the final 10 minutes so the skin has time to brown. The breast should register 165°F, and the thighs should register at least 175°F, without the thermometer touching bone.
Rest and serve
Transfer the chicken to a carving board and rest for 15 minutes. Discard the neck and cavity herbs, then serve the carved chicken with the vegetables and plenty of buttery lemon pan juices. Don’t leave those behind!

Watch the liquid. If the pot becomes dry before the potatoes are tender, add a little warm chicken broth around the sides.

This Dutch oven Greek roast chicken and potatoes is the ultimate cozy one-pot dinner. A whole chicken is coated underneath and over the skin with garlicky lemon-herb butter, then roasted over Greek-style potatoes until incredibly juicy and golden. Ingredients
For the Potatoes and Vegetables
- 2 and 1/2 pounds baby gold potatoes, halved
- 1 large onion, peeled and quartered
- 1 whole head of garlic, cut in half vertically and divided
- 2 carrots, peeled and cut into halves or thirds
- 1 large celery stalk, cut into halves or thirds
- Juice of 2 lemons
- Olive oil, for drizzling
- Salt, to taste
- Freshly cracked black pepper, to taste
- Crushed red pepper flakes, to taste
- Dried crushed oregano, to taste
- 3/4 cup chicken broth
- Chicken neck, if included with the chicken
For the Chicken
- 1 whole chicken, approximately 4 and 1/2–5 pounds
- 4 ounces salted butter, melted
- Juice of 1–2 lemons
- Salt, to taste
- Freshly cracked black pepper, to taste
- Dried crushed oregano, to taste
- Crushed red pepper flakes, to taste
- 2 teaspoons ground coriander, divided
- 1 teaspoon ground cumin
- 2 sprigs fresh rosemary
- A small bunch fresh thyme sprigs
Instructions
Prepare the Potatoes and Vegetables
Preheat the oven to 400°F.
Place the halved baby gold potatoes in a large covered Dutch oven. Add the quartered onion, one half of the garlic head, carrots, and celery.
Add the juice of 2 lemons and drizzle everything generously with olive oil. Season with salt, black pepper, crushed red pepper flakes, and dried oregano.
Pour the chicken broth around the vegetables and toss everything together until evenly coated.
Remove the chicken neck from the cavity, if included, and add it to the potatoes. The neck will enrich the broth and add even more flavor to the vegetables and pan juices.
Prepare the Chicken
Remove everything else from the chicken cavity and pat the chicken dry inside and out with paper towels.
Carefully separate the skin from the breast meat without tearing it.
Season the back of the chicken with salt, black pepper, and dried oregano.
Place the chicken breast-side up directly over the potatoes and vegetables.
Season the Chicken Cavity
Place the remaining half of the garlic head inside the chicken cavity.
Season the cavity with 1 teaspoon salt, 1 teaspoon ground coriander, 1 teaspoon ground cumin, and 1 teaspoon dried oregano.
Add the rosemary and fresh thyme sprigs to the cavity.
Butter and Season the Chicken
Season the melted salted butter with black pepper and dried oregano. Taste before adding additional salt because the butter is already salted.
Pour some of the seasoned melted butter underneath the loosened breast skin. Gently spread the butter over the breast meat without tearing the skin.
Pour the remaining melted butter over the top of the chicken and legs.
Pour the juice of 1–2 lemons over the chicken. Season the top with salt, the remaining 1 teaspoon ground coriander, crushed red pepper flakes, black pepper, and dried oregano.
Roast the Chicken Covered
Cover the Dutch oven with its lid and roast at 400°F for 1 hour.
Uncover, Baste and Brown
Carefully remove the Dutch oven from the oven and take off the lid.
Increase the oven temperature to 425°F.
Baste the chicken generously with the buttery lemon pan juices. Gently turn the potatoes and vegetables so they cook evenly and become coated in the juices.
Return the uncovered Dutch oven to the oven and continue roasting for 35–45 minutes. Baste the chicken several times with the pan juices as it roasts.
Allow approximately 10 minutes between the final basting and removing the chicken from the oven so the skin has time to become golden.
The chicken is ready when the thickest part of the breast registers 165°F and the thighs register at least 175°F without the thermometer touching the bone.
If the skin becomes deeply browned before the chicken is fully cooked, loosely cover the top with foil and continue roasting.
Rest and Serve
Transfer the chicken to a cutting board and allow it to rest for 15 minutes before carving.
