My Chicken Saganaki is a play on the Greek classic shrimp saganaki. Chicken is cooked in a flavorful tomato and feta sauce and topped with scallions. So easy and delicious. As a side, I made some garlicky broccolini that was ready in under 10 minutes. For dessert, we have berries with cream and chocolate. Also ready in 10 minutes. This entire menu is perfect for a weeknight family meal and elegant enough to serve at a fancy dinner party.


Chicken Saganaki
Although this is not a classic Greek dish, it has all of the delicious flavors of the Aegean. The homemade tomato sauce is simple to make and the addition of feta makes it so delicious. Feel free to substitute store-bought pasta sauce if you’re in a pinch for time.
The addition of scallions adds freshness. You can substitute fresh chopped parsley instead of the scallions if you prefer.
Finishing the dish off under the broiler is recommended. If your oven does not have a broiler element on top, set it to the highest heat setting and cook until the top is golden.


10-Minute Garlic Broccolini
Broccolini is sometimes sold as baby broccoli, in the supermarket. It is so much better than broccoli. More tender, mild, and cooks in no-time.
This recipe is so basic and easy. 3 ingredients: broccolini, olive oil, and garlic. And some salt too, of course! I added some halved radishes for a peppery, crunchy bite. Feel free to substitute nuts (pine nuts, walnuts, or almonds), or to leave the broccolini plain.

The Dessert
Dessert doesn’t get simpler than this. Berries, whipped cream, and melted chocolate. Use any combination of your favorite fresh berries that you love. Here are some more options:
- Add some citrus zest to the berries
- Use warmed chocolate hazelnut spread (Nutella/Merenda) instead of the melted chocolate
- Add some toasted chopped nuts on top of the dessert
- Create a trifle by adding some cake or shortbread cookie layers.
- Garnish with a cookie on top.
- make the dessert healthier using vanilla greek yogurt instead of the whipped cream.

Serving Suggestions
Serve this meal with toasted bread or with your favorite pasta. To keep it low-carb, serve it with a side of cauliflower rice or zucchini noodles.

CHICKEN SAGANAKI (30 MINUTE MEAL): GREEK STYLE CHICKEN IN A TOMATO & FETA SAUCE
A flavorful main course that’s perfect for a busy weeknight served alongside pasta and great for entertaining. Make it for 2 or 22. Everyone will love it.
Ingredients
- 1-1 and ½ pounds boneless skinless chicken breast, cubed
- 1/4 cup olive oil
- 1 small onion (216 grams/half pound) finely chopped
- 3-4 garlic cloves, sliced
- 14.5 ounces (411g) canned tomatoes, pureed (make sure they’re unsalted and no flavors added)
- 1/2 cup water
- 1 teaspoon dried oregano
- ½ teaspoon sugar, or more
- pinch of crushed red pepper flakes
- salt and freshly ground black pepper, to taste
- 1 cup crumbled feta cheese
- 4-6 scallions, finely chopped
Instructions
- Preheat the broiler on high.
- Place the chicken cubes on a tray or in a shallow bowl and season both sides with salt and black pepper.
- Heat a 10-inch (26 cm) ovenproof skillet over medium-high heat. Add olive oil and 1/3 of the chicken cubes making sure to not crowd the pan. Sauté the chicken 1-2 minutes per side until lightly brown. Transfer onto a plate and do the same with the remaining chicken.
- Lower the heat to medium-low and cook the onions and garlic for about 8-10 minutes or until slightly golden, translucent, and soft.
- Add tomatoes, water, sugar, oregano, crushed red pepper flakes, black pepper, and a little salt. Take care not to add too much since the feta cheese that will be added in the end will be salty.
- Cook the sauce until it reduces and thickens.
- Put all of the chicken into the pan, top with crumbled feta cheese, and bring to a boil.
- Transfer the pan (if it is oven-proof) to the oven on the center rack and cook for about 5-8 minutes or until the cheese melts, the sauce is bubbly and slightly charred.
- Garnish with scallion slices and serve.
- Serve with hearty, toasted bread or over pasta.

Quick & Easy Garlic Broccolini
Ingredients
- 3 bunches broccolini (a little over a pound)
- 3-4 tablespoons olive oil
- 5-6 garlic cloves, sliced
- Salt
- 7-8 small radishes, halved
Instructions
Bring a pot of salted water to a boil.
Trim the bottom third of the stem of the broccolini and discard it.
Boil the broccolini for 2 minutes. Drain the broccolini and set it aside.
In a cast-iron skillet or a large pan, heat the olive oil over medium heat.
Add the garlic and cook until golden. About 2 minutes.
Add the broccolini and saute for 2 minutes. Toss it in the oil and garlic.
Remove from the heat and add the radishes. Serve.

Dessert in 10 Minutes: Berries, Cream & Chocolate
A quick, easy, and elegant dessert.
Ingredients
- fresh berries (strawberries, blueberries, blackberries, raspberries, etc)
- 1- 2 teaspoons of granulated sugar
- 1 cup heavy cream
- 1-2 tablespoons confectioner's sugar
- 1 teaspoon pure vanilla extract
- semi-sweet chocolate or your favorite chocolate
- Optional garnish: shortbread cookies
Instructions
Make the whipped cream
In the bowl of a tabletop mixer that has been fitted with the whisk attachment, combine the cream, sugar, and vanilla extract. Whip together until thick and creamy.
Melt the chocolate in the microwave or over a double boiler. Mix together until smooth and shiny.
Place the berries in a bowl and sprinkle with some granulated sugar. If using strawberries, cut them into slices or quarters. Mix together.
Add a layer of berries to a cup or a mini trifle bowl. Top with a dollop of the whipped cream. Add some more berries on top and then drizzle chocolate over the berries. Top with a cookie and serve.
