
TIRAMISU

Ingredients
For the creamy filling:
- 6 egg yolks
- 1/3 cup sugar
- pinch of salt
- 1 teaspoon pure vanilla extract
- 1 pound mascarpone cheese, at room temperature
- 1 and 1/2 cups heavy whipping cream
- 3/4 cup confectioner's sugar
- 1 teaspoon pure vanilla extract
For the coffee syrup:
- 2 cups espresso
- 2 tablespoons vanilla extract
- 1/4 cup chopped semi sweet chocolate
- 20-24 ladyfingers
- cocoa powder for dusting
- chocolate shavings for garnish
Instructions
- Begin by preparing a double boiler. Bring some water to a boil in a small pot and place a bowl over it. Reduce the heat to a simmer and make sure that the hot water does not touch the bottom of the bowl.
- Combine the egg yolks, salt and sugar in the bowl and place over the simmering water. Using a whisk or a handheld mixer, beat the egg yolk mixture for about 10 minutes with the whisk and 7 minutes with the mixer. Until thick, creamy and pale yellow in color. This step allows the egg yolks to cook.
- Allow to cool a bit then add the mascarpone cheese with 1 teaspoon vanilla extract. Beat well to incorporate.
- Prepare whipping cream by combining the heavy whipping cream, confectioner's sugar and vanilla extract together and whisk until thick and fluffy.
- Fold the whipped cream into the mascarpone cream mixture with a spatula.

- Combine the espresso with the chocolate and vanilla extract. Mix well until chocolate melts and it all blends together.
- Dip the lady fingers in the coffee syrup and place in an 8 x 8 inch square pan in an even layer.
- Spread half of the mascarpone cream mixture over the soaked lady fingers. Dust generously with cocoa powder and sprinkle with finely chopped chocolate.
- Place another layer of coffee soaked lady fingers over the cream and top with the remaining cream. Spread.
- Generously dust cocoa powder on top and garnish with chocolate shavings.
- It is very important to chill this dessert in the refrigerator for at least 6 hours. Overnight is best.
- 24 hours is even better because the lady fingers really get a chance to soak up maximum flavor.
- Serve and enjoy!

Hi! You can use any coffee that you have on hand. Traditionally, espresso is used but you can use a strong instant coffee brew as well 🙂

I made this for my sweet precious mamma’s 85th Birthday! She loves Tiramisu and she absolutely loves this version hands down. The local Italian restaurant we so enjoyed (Greek owned of course) was where we used to buy the Tiramisu from closed it’s doors for good. For 6 years I’ve been trying to find a recipe that even comes close. Well, yours surpassed it! Honestly, the flavor profile is even better than the one we used to love which was in and of itself was pretty fantastic! I have the exact same Emile Henry 8 x 8 baking dish you used and it filled it perfectly.
I decided not to use the eggs in mine. So I made some adjustments:
For the Cream Mixture:
I whipped 3 cups Organic Heavy Whipping Cream with 2/3 cups fine Organic Granulated Sugar (ran it through food processer for 2 minutes), 3 teaspoons Pure Vanilla Extract and then mixed in the 16 ounce container Mascarpone Cheese room temperature
For the Syrup: 2 cups Espresso (I used Delallo Instant Espresso: 24 teaspoons (which equates to 8 Tbsps) of Instant Espresso added to 2 cups HOT Water ), 2 Tablespoons Pure Vanilla Extract and upped the Semisweet Chocolate chips from a 1/4 cup to 1/3 Cup
I used all 24 of the Delallo Savoiardi Italian Lady Fingers. You were right! Soak them longer! Like you said, that is where all the flavor is!
We’ve also done your brilliant Ultimate Gyro, which is out of this world (with no adjustments btw) and the pita breads. That recipe has made it around my extended family and friends. It tastes exactly like “The Greek Corner Restaurant in Cambridge MA which Guy Fierri was on”. Quite frankly it’s better.

I made this sumptuous dessert last night and put it in the fridge until around 3o’clock this afternoon. I don’t think that I’d change a thing as it was delicious as is. It takes so much like the Tiramisu served in our local Greek Restaurant that we always order. So now, I guess that I’ll have to try a different dessert when dining out and get your recipe for it.
