My delicious version of this simple syrupy phyllo and custard cake!

A TikTok video featuring a crinkle Greek custard cake has gone viral. Several of you saw it and asked for my take since I already do this phyllo technique for most of my phyllo Greek pies. Crinkling the phyllo topping in a beautiful accordion style makes my pies look amazing and adds extra crunchy phyllo texture. In the TikTok video, the girl uses the crinkle, accordion-style phyllo as the base crust and bakes it with custard on top. It’s such a simple dessert, and my take on it isn’t too much different. The most significant difference with my version is that I make a double batch of custard with half the amount of phyllo because I love the custard. I know you’re going to love it too!

What you’ll need
- (#4) phyllo pastry –thawed and at room temperature
- Butter –melted for pouring
For the Syrup:
- Granulated sugar
- Water
- Peel of an orange or lemon
- Pure vanilla extract
The Custard:
- Milk
- Granulated sugar
- Cornstarch
- Fine semolina flour –adds heartiness
- Egg yolks –to make your custard silky and rich
- Pure vanilla extract
Garnish:
- ground cinnamon
- finely chopped pistachios, walnuts, or sliced almonds

How to make the TikTok Crinkle Greek Custard Cake
Make the syrup:
- Combine all syrup ingredients in a small saucepan and bring to a boil.
- Cook for 2-3 minutes over medium heat and then remove from the heat.
- Stir in the vanilla extract and set aside to cool.
The crinkled phyllo:
- Preheat the oven to 350 °F, 180 °C
- Take 2 sheets of phyllo at a time and gather them up into an accordion, and place them in a 9 x 13-inch baking pan.
- Bake on the center rack of the preheated oven for 10 minutes.
- Pour the butter evenly over the top of the pastry and bake for an additional 10 minutes.
Make the Custard:
- Combine all custard ingredients in a mixing bowl and whisk together until smooth.
- When the phyllo comes out of the oven, pour the custard on top and bake for 30-35 minutes.
- As soon as the pastry comes out of the oven, pour the syrup over the crinkled custard.
- If desired, garnish with cinnamon and nuts, then set it aside until the custard sets and the syrup is absorbed—about 20 minutes.

Serving
This really is an easy dessert. The top will be crispy, and the custard-filled phyllo pockets will be softer. Doubling the amount of my custard and using just the egg yolks makes the dessert very smooth, creamy, and luxurious. Serve it warm and with hot Greek coffee for the most dramatic effect! I’m having unexpected company over Easter week-end. Everyone loves my galatobouretico, but decided to try this instead; made a trial one today…its absolutely as you said, house smells absolutely delicious ( experimented a bit, added ouzo in place of vanilla). . Hey Dimitra! One question…How do you store this if whole pan is not eaten after first made? I assume it’s to be stored in fridge due to the custard in it, but will that make it soggy— Is storage of this dish not feasible? TIA. Yasas.
Can I omit the cornstarch ?????
You can use arrowroot powder instead or semolina flour 🙂
