ROASTED VEGETABLE SALAD
- 1/4 cup balsamic vinegar
- 1/3 cup extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon oregano
- pinch of salt
- freshly ground pepper
- Same roasted vegetable recipe served another way. Combined with a simple balsamic vinaigrette, this already super flavorful dish rises to another level!
- While the vegetables are still warm, transfer them into a serving bowl. Combine all of the vinaigrette ingredients in a bowl and whisk together to combine.
- Pour over the warm roasted veggies. Toss to coat evenly.
