I saw a viral video on eggs in a hole a while ago and thought it would be so good with Greek bread rings known as Koulouria Thessaloniki’s. Let me tell you… I was right! Of course, I made it Greek-style, and it’s become one of my go-to’s. Mainly because it’s a complete meal and makes a great breakfast, brunch, lunch, or dinner. However, I use it a lot to serve brunch to a crowd, too, because you can do most of the prep work beforehand. Then, just put it all together and in the oven for about 10 minutes. It’s easy, I usually have all the ingredients on hand, and everyone loves it. You will too!

- Gyro slices -sub pasturma slices, beef strips, or make it meatless
- Feta cheese
- Scallions -thinly sliced
- Grape tomatoes -halved

What other bread can I use for eggs in a hole?
I really hope you try my Greek bread ring recipe. It’s easy, and you can season them how you like it. I usually make half a batch with everything bagel seasoning and the other half plain. You could season them with sesame seeds, herbs, or your favorite combination. Here’s the link to the bread rings. Fresh bagels or homemade crusty sourdough from the farmer’s market would be good substitutes if you want to use something premade.

How to make Eggs in a Hole Greek-style
- Preheat the oven to 400 °F, 200 °C.
- Cut a 2-inch hole in the center of each bread ring.
- Slice the bread rings in half and brush the bottoms with olive oil.
- Place them cut side down onto a baking tray or into a cast-iron skillet.
- Top the bread with a slice of gyro, tucking it into the hole so the egg can fit.
- Crack an egg into each hole.
- Add the tomatoes, olives, and scallions to the skillet.
- Drizzle some olive oil on top.
- Season the eggs with salt, pepper, and crushed red pepper flakes.
- Place the skillet on the middle rack of the preheated oven and bake for 10 minutes.
- Turn the broiler element on high and cook until the eggs are done to your liking but be careful not to overcook them as they will continue to set once they are out of the oven.

Serving
Whether you call it eggs in a hole or eggs in a nest, this is a delicious brunch recipe. The bread rings look so much like bagels that your family will be impressed you made them from scratch, and they’ll never realize you only had to cook the egg. I think the skillet looks so beautiful with the bright red tomatoes, green scallions, and perfectly cooked eggs that you can serve these immediately right out of the pan. Ingredients
- Koulouria Thessaloniki's (Greek Bread Rings)
- Gyro slices or pasturma slices

- 2-3 scallions, thinly sliced
- grape tomatoes, halved
- olive oil
- salt & pepper
- Kalamata Olives, pitted
- crushed red pepper flakes
Instructions
- Preheat the oven to 400 °F, 200 °C.
