It’s hot, the kids are at home, you’re planning summer vacations, so I thought I’d lighten your load with seven Mediterranean dinners to cook this week. They’re all quick and easy meals that won’t heat up the kitchen, and there isn’t one on this list that isn’t cozy and delicious. So, get your tzatziki, feta, and crusty bread ready to enjoy a week in the Mediterranean!

You’ll find spinach in every Greek kitchen, so why not start the week off with an easy, creamy one-pan Mediterranean chicken and orzo skillet with spinach and feta. It’s loaded with chewy, sweet, and tangy sun-dried tomatoes that take it over the top delicious. Keep the orzo and pan out for my hearty tomato-based Greek skillet chicken and orzo youvetsi. It’s a traditional Greek dish often made in Greek households that’s comforting and homey. If you have any garden fresh tomatoes left, pick some peppers, too, for a low carb unstuffed pepper stew that high in protein and a way to have stuffed peppers without the time it takes to make them.

With all the amazing Mediterranean meals, I couldn’t help but smash two classics together with my cozy and delicious Greek lemony chicken with spinach pilaf. You still only need one pan and less than an hour, and you may never make them separately again. By this time, you may have some company, so a cozy beef stew with peppers and mushrooms will give everyone a true taste of Greece. Finish the week off light with zesty, lemony beeftekia me patates, a Greek lemony potatoes and meatballs dish that’s simple to make with basic ingredients, and the most delicious loaded Greek chicken souvlaki bowls you’ll ever have.
