1/4 cup balsamic vinegar
1/3 cup extra virgin olive oil
1 tablespoon honey
1 teaspoon oregano
pinch of salt
freshly ground pepper
While the vegetables are still warm, transfer them into a serving bowl. Combine all of the vinaigrette ingredients in a bowl and whisk together to combine.
Pour over the warm roasted veggies. Toss to coat evenly.
